The Manager, Food & Beverage at the Jackie Robinson Training Complex (JRTC) oversees all aspects of day-to-day food and beverage (F&B) operations across an 80-acre property, ensuring high-quality service, compliance with health and safety standards, and a positive dining experience for all guests. This includes forecasting, planning, and managing F&B orders, staff, and finances, while upholding guest service as a top priority. The Manager also maintains and oversees the Point-of-Sale (POS) system, ensuring accurate and efficient transaction processes. Adherence to production guidelines, sanitation requirements, department rules, and MLB standards for food display and presentation is paramount. The Manager is expected to work alongside staff in the kitchen to ensure consistency in food preparation and foster a collaborative team environment.
Responsibilities:
- Operations Management
- Oversee and drive strategy for all food and beverage operations across the 80-acre property, including multiple concession stands, large dining room serving onsite and offsite hotel guests, and catering services for all banquet rooms, meeting rooms, locker rooms, and like facilities.
- Ensure consistent and efficient service that meets or exceeds company standards and guest expectations.
- Create and maintain operational procedures to streamline workflow and uphold safety and sanitation requirements.
- Regularly work in the kitchen and other F&B areas with staff to provide on-site guidance, ensure consistency, and foster teamwork.
- Staff Leadership & Development
- Directly supervise 6 full-time staff members and approximately 55 part-time employees, ensuring clear communication of duties and responsibilities.
- Recruit, hire, train, and mentor F&B staff; provide regular feedback, coaching, and performance evaluations.
- Maintain efficient staffing levels across all F&B outlets, adjusting schedules based on event size, season, and overall operational demands.
- POS System Management
- Manage and oversee the daily use, maintenance, and troubleshooting of the stadium’s POS system for all F&B outlets.
- Train staff to use the POS system properly to ensure accurate transaction processing and end-of-shift reconciliation.
- Coordinate with IT or vendors for necessary software updates and hardware support.
- Financial & Budgetary Oversight
- Develop and manage F&B budgets, including cost forecasts, revenue projections, and labor expenses.
- Track and analyze sales data from concession stands and dining services; recommend strategic adjustments to menus, pricing, and inventory based on demand and profitability.
- Oversee reconciliation of daily sales (cash, credit cards, tips), ensuring compliance with company policies/procedures.
- Menu, Recipes & Inventory Management
- Work with chefs or culinary staff to develop and maintain menus that are cost-effective, appealing, and nutritionally balanced.
- Ensure staff adheres to established recipes to maintain consistent quality, taste, and portion sizes.
- Review food inventory levels; order and receive shipments from food vendors.
- Negotiate supplier arrangements for food and beverage products.
- Ensure that food portions and presentation meet JRTC standards as well as MLB guidelines for professional appearance and quality.
- Quality & Compliance
- Ensure strict adherence to local, state, and federal health and safety regulations.
- Oversee cleanliness and sanitation of all food and beverage facilities.
- Maintain accurate records of compliance documents, staff certifications, and safety training.
- Maintain food displays that align with MLB standards for professional presentation.
- Collaboration, Communication & Continuous Improvement
- Coordinate with other departments or event organizers to meet group dining or catering needs.
- Communicate effectively with leadership on operational progress, challenges, and initiatives.
- Foster a positive, team-oriented atmosphere that encourages continuous improvement and high morale.
- Evaluate operations, gather feedback from staff and guests, and implement best practices or innovative approaches to enhance the overall F&B experience.
- Stay current on industry trends, emerging technologies, and culinary innovations.
- Other Duties
- Regularly monitor all F&B equipment, verifying proper functionality and safety, ensuring preventative maintenance procedures are upheld, and promptly reporting any concerns or repairs needed.
- Perform additional tasks as assigned by the Senior Manager, Operations.
Requirements:
- Education & Experience
- Bachelor’s degree in Hospitality, Culinary Arts, Business Administration, or a related field (preferred) OR equivalent work experience.
- Minimum of 3–5 years of food and beverage management experience, preferably overseeing multiple outlets or large-scale operations.
- Leadership & Management Skills
- Demonstrated success in managing teams of 30+ employees, including hiring, training, and performance management.
- Ability to lead, inspire, and develop a diverse workforce in a fast-paced environment.
- Operational & Financial Acumen
- Proven track record in budgeting, forecasting, and inventory control.
- Familiarity with POS systems and ability to interpret sales data for decision-making.
- Communication & Interpersonal Skills
- Excellent written and verbal communication skills; able to liaise effectively with senior management, staff, and vendors.
- Calm, diplomatic approach to conflict resolution and problem-solving
- Health & Safety Knowledge
- Thorough understanding of food safety regulations, sanitation standards, and best practices.
- Ability to manage compliance requirements and maintain documentation accurately.
- Physical & Scheduling Requirements
- Availability to work flexible hours, including weekends, evenings, and holidays as needed.
- Physical ability to stand, walk, and lift moderate weights (up to 50 lbs.) for extended periods.
- Ability to obtain and maintain a food handler certification card.
The Jackie Robinson Training Complex (JRTC), operated by Major League Baseball (MLB) located in Vero Beach, Florida, serves as a year-round hub for amateur development initiatives and events designed to diversify and strengthen the talent pipelines of baseball and softball. We are the permanent home to several signature youth-focused events and programs, such as the Nike RBI World Series and the Hank Aaron Invitational, which teach players how to succeed on and off the field. The historic facility, formerly known as Dodgertown, was renamed Jackie Robinson Training Complex in honor of its trailblazing namesake.
